# Expert Advice:

01 -
  • Raw garlic's bite transforms into creamy sweetness—it's like a completely different ingredient that works magic on anything it touches.
  • You'll feel like you're pulling concentrated flavor from the oven, and suddenly you have something that tastes fancy but required almost no effort.
02 -
  • Don't skip wrapping it in foil—unwrapped garlic will dry out and scorch, and you'll lose all that creamy sweetness you were after.
  • The smell while it's roasting is intoxicating, but patience matters; underbaked garlic still has that raw bite, so make sure the cloves are truly soft before you call it done.
03 -
  • If you're cooking for someone who says they don't like garlic, roasted garlic is your secret weapon—the transformation is so complete that it often wins over the skeptics.
  • Don't waste the foil; use it as a tiny serving vessel, scrunched into a little boat that holds the garlic head and looks charming on the table.
