01 - Using a fine grater or microplane, gently grate only the yellow outer layer (zest) of the lemon, avoiding the bitter white pith beneath.
02 - Collect the grated zest and use immediately, or store in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a sealed bag.
