- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large mixing bowl, combine the ground beef, egg, breadcrumbs, minced garlic, grated ginger, sliced green onions, Sriracha sauce, soy sauce, salt, and black pepper. Mix gently until just combined, taking care not to overwork the mixture.
- Roll the meatball mixture into 1-inch (2.5 cm) balls. Arrange them in a single layer on the prepared baking sheet.
- Bake the meatballs for 15 to 18 minutes, or until they are browned and fully cooked through.
- While the meatballs are baking, combine the Sriracha sauce, honey, soy sauce, rice vinegar, and sesame oil in a small saucepan. Whisk the ingredients together. Bring the mixture to a simmer over medium heat and cook for 2 to 3 minutes, stirring occasionally, until the glaze slightly thickens.
- Once baked, transfer the hot meatballs into the saucepan with the glaze. Toss gently until each meatball is evenly coated.
- Transfer the glazed meatballs to a serving platter. If desired, sprinkle with sesame seeds and additional sliced green onions before serving.
