Pineapple Coconut Lime Popsicles (Printable version)

Tropical frozen blend of pineapple, coconut, and lime.

# What you need:

→ Fruit & Juice

01 - 2 cups fresh pineapple chunks (about 1/2 medium pineapple)
02 - 1/4 cup fresh lime juice (about 2 limes)

→ Coconut Mixture

03 - 1 cup full-fat coconut milk (well shaken)
04 - 1/4 cup coconut cream
05 - 3 tbsp maple syrup or honey (to taste)
06 - 1 tsp grated lime zest

# How To:

01 - In a blender, combine pineapple chunks and lime juice. Blend until completely smooth, then set aside.
02 - In a separate bowl, whisk together coconut milk, coconut cream, maple syrup or honey, and lime zest until well combined.
03 - Alternate spooning or pouring layers of pineapple puree and coconut mixture into popsicle molds. Use a skewer or thin knife to gently swirl the layers for a marbled effect, if desired.
04 - Insert popsicle sticks and freeze for at least 4 hours, or until fully solid.
05 - To unmold, briefly run the outside of the popsicle molds under warm water, then carefully remove popsicles.
06 - Serve immediately and enjoy!
