01 - Place diced mango, grated ginger, lime juice, honey or agave, and 1/2 cup cold water in blender. Blend until completely smooth, about 30 seconds.
02 - Pour blended mixture through fine mesh sieve into pitcher or bowl. Press with spoon to extract liquid, discarding fibrous pulp.
03 - Fill two serving glasses with ice cubes.
04 - Divide mango-ginger puree between glasses, filling each approximately halfway.
05 - Top each glass with chilled sparkling water. Stir gently with spoon to combine flavors.
06 - Add fresh mango slices, lime wedges, or mint sprigs as desired. Serve immediately while cold.
