Healthy Nice Cream (Printable version)

A creamy, refreshing frozen dessert made from frozen bananas, offering a healthy alternative to traditional ice cream. Naturally sweetened and dairy-free.

# What you need:

→ Base

01 - 4 large ripe bananas, peeled, sliced and frozen

→ Optional Flavor Additions

02 - 2 tablespoons unsweetened cocoa powder (for chocolate variation)
03 - 1/2 cup frozen berries (for berry variation)
04 - 2 tablespoons peanut butter or almond butter (for nutty variation)
05 - 1 teaspoon pure vanilla extract
06 - Pinch of fine sea salt

→ Optional Toppings

07 - Fresh fruit such as berries or sliced bananas
08 - Chopped nuts or seeds
09 - Dark chocolate shavings
10 - Toasted coconut flakes

# How To:

01 - Place the frozen banana slices into a high-powered food processor or blender. Pulse until the bananas break down into small crumbly pieces, then blend continuously until a smooth, creamy mixture forms. Scrape down the sides of the bowl as needed to ensure even processing.
02 - Add any desired flavor additions such as cocoa powder, frozen berries, nut butter, vanilla extract, or salt. Blend again until all ingredients are fully incorporated and the mixture is uniformly smooth.
03 - If the mixture appears too thick or stubborn, add a small splash of plant-based milk and blend briefly until the desired creamy consistency is reached.
04 - Serve immediately for a soft-serve consistency, or transfer the mixture to a freezer-safe container and freeze for 1 to 2 hours for a firmer, scoopable texture.
05 - Top with your choice of fresh fruit, chopped nuts or seeds, dark chocolate shavings, or toasted coconut flakes before serving.

# Expert Advice:

01 -
  • It genuinely tastes like soft serve ice cream but the entire ingredient list fits on one hand and none of them involve heavy cream.
  • You can keep a stash of frozen bananas ready and have dessert ready in literally the time it takes to blend.
02 -
  • Underripe bananas will taste vegetal and oddly chalky no matter how long you blend them, so wait until those peels are covered in brown spots before freezing.
  • If your blender is struggling and making angry noises, let the banana slices sit at room temperature for two or three minutes to soften slightly before trying again.
03 -
  • Freeze your banana slices on parchment paper first before transferring to a bag so they do not freeze into one giant unusable clump.
  • A tiny drizzle of maple syrup right at the end of blending adds a caramel like depth that makes people ask what your secret ingredient is.
