01 - Preheat oven to 375°F. Lightly grease a 1-quart baking dish with nonstick spray or butter.

04 - Stir in the sweet chili sauce, sriracha, lime juice, honey, minced garlic, smoked paprika, onion powder, salt, and black pepper until evenly incorporated.
05 - Gently fold in the cooked shrimp along with half of the mozzarella and half of the cheddar cheese. Mix until well distributed.
06 - Spread the shrimp and cheese mixture evenly into the prepared baking dish. Sprinkle the remaining mozzarella and cheddar cheese over the top.
07 - Bake for 18–20 minutes, or until the cheese is melted, bubbling, and golden brown on top.
08 - Remove from the oven and let rest for a few minutes. Garnish with sliced green onions and chopped cilantro if desired. Serve warm with tortilla chips, sliced baguette, or vegetable sticks.

# Expert Advice:

01 -
  • The creamy, spicy, cheesy trifecta disappears faster than anything else on the table, guaranteed.
  • It tastes like something from a restaurant menu but comes together with pantry staples in half an hour.
02 -
  • Overcooking the shrimp in the skillet is the most common mistake because they will cook a little more in the oven, so pull them when they are just barely done.
  • Shredding your own cheese from a block melts far better than the pre shredded bags, which are coated in anti caking powder.
03 -
  • Cook the shrimp a day ahead and keep them in the fridge so the whole dish comes together in ten minutes when guests arrive.
  • A tiny splash of fish sauce stirred into the base adds depth without tasting fishy, and no one will guess your secret.
