# What you need:

→ Dairy

01 - 7 oz cream cheese, softened
02 - 7 oz shredded cheddar cheese
03 - ⅓ cup plus 1½ tbsp whole milk

→ Spices & Seasonings

04 - 1 tsp garlic powder

# How To:

01 - In a medium saucepan over medium-low heat, combine the softened cream cheese and milk. Stir continuously until the mixture is smooth and fully melted together.
02 - Gradually add the shredded cheddar cheese in handfuls, stirring constantly after each addition until the cheese is completely melted and the mixture is silky smooth.
03 - Stir in the garlic powder, onion powder, smoked paprika, black pepper, cayenne pepper (if using), and salt. Continue heating gently for 2 to 3 minutes, stirring frequently to prevent sticking or scorching.
04 - Remove the saucepan from heat. Transfer the dip to a serving bowl and garnish with chopped fresh chives or green onions if desired.
05 - Serve immediately while warm alongside tortilla chips, breadsticks, or fresh cut vegetables such as celery, carrots, and bell peppers.

# Expert Advice:

01 -
  • The smoked paprika and cayenne give it a subtle smoky heat that store bought dips can never replicate.
  • It uses simple pantry spices and everyday dairy ingredients you probably already have on hand.
02 -
  • Never crank the heat above medium low or the cheese will separate and turn greasy instead of creamy.
  • If the dip thickens too much as it cools, simply reheat it gently with a splash of milk and stir until it comes back to life.
03 -
  • Shred your own cheese from a block because pre shredded varieties are coated in anti caking powders that make the dip grainy instead of smooth.
  • Let the cream cheese fully soften at room temperature before starting and the entire cooking process will be faster, smoother, and far less frustrating.
