04 - Evenly spread 2 to 3 tablespoons of the whipped garlic feta over each pita round.
05 - Layer sliced mozzarella and tomatoes over the feta-spread pitas. Add red onion slices if desired, then season with salt and black pepper.

07 - Remove from oven and allow to cool slightly. Top with fresh basil leaves and drizzle with balsamic glaze if using. Slice and serve promptly.

# Expert Advice:

01 -
  • No dough rolling is needed – the pita forms a perfect crust with zero stress.
  • The luscious whipped feta gives every bite a restaurant-worthy richness.
02 -
  • Don’t overtop: heaping on extra cheese or too many tomatoes leads to a soggy base, speaking from saucy experience.
  • Warming the pita in the oven before adding toppings prevents a rubbery texture — I learned that after my first batch went limp.
03 -
  • Always drain fresh mozzarella well; even a little extra water can make the pizza soggy.
  • If the whipped feta is too thick, adding just a splash more olive oil or lemon juice can fix it instantly.
