01 - Preheat the oven to 425°F or heat oil in a deep fryer to 350°F. If baking, line a baking sheet with parchment paper.
02 - Halve the avocados, remove the pits, and peel. Cut each half into 4 to 5 thick wedges.
03 - Set up three shallow bowls: one with all-purpose flour, one with beaten eggs, and one with panko breadcrumbs combined with smoked paprika, garlic powder, salt, and black pepper.
04 - Dredge each avocado wedge in flour, dip in egg, and coat thoroughly in the seasoned panko mixture.
05 - Place coated avocado wedges on the prepared baking sheet and spray lightly with olive oil. For frying, fry in batches for 2 to 3 minutes until golden and crisp; drain on paper towels. For baking, bake for 12 to 15 minutes, turning halfway and spraying again, until golden and crispy.
06 - In a small bowl, whisk together Greek yogurt, mayonnaise, lime juice, hot sauce if using, cilantro, salt, and pepper. Chill until serving.
07 - Serve the hot avocado fries immediately with the chilled dipping sauce on the side.
